Peach, Cucumber, and Jicama Salad

Summer refreshment comes in the form of this unique salad! The textures of sweet, soft peaches and super crunchy jicama and cucumber.


Serves 4-6

4 medium ripe peaches, (yellow or white) pitted and sliced

1 English cucumber,

thinly sliced into half moons 1 cup jicama peeled and julienned,

1/2 cup thinly sliced red onion

juice of one lemon,

juice of one orange,

3 tablespoons chopped fresh basil,

2 tablespoons chopped walnuts sea salt and fresh ground black pepper

Combine all ingredients except for basil, walnuts, sea salt and black pepper in a large bowl. Toss well to combine. Season to taste with salt and pepper. Transfer to a white serving platter. Garnish with basil and walnuts and serve immediately.
