Chocolate Banana Popsicles (makes 8)

Ingredients:

  • 3 ripe bananas
  • 1 cup unsweetened almond milk
  • 4 Tbsp. unsweetened cocoa powder
  • 1 tsp. vanilla extract

Directions:

  1. Blend all ingredients until smooth.
  2. Pour into Popsicle molds and freeze until solid (about 3 hours).

Coconut Mango Popsicles (makes 8)

Ingredients:

  • 1 lb. ripe mangoes, chopped
  • 1 cup unsweetened coconut milk
  • 1 Tbsp. lime juice
  • 1/4 cup unsweetened shredded coconut

Directions:

  1. Blend mangoes, cocount milk, and lime juice until smooth.
  2. Mix in shredded coconut and pour into molds. Freeze until solid.

Watermelon and Strawberry Mint Popsicles (makes 8)

Ingredients:

  • 4 cups seedless watermelon, cubed
  • 1 dry pint strawberries, stems removed
  • handful of fresh mint

Directions:

  1. Blend all ingredients until smooth.
  2. Pour into Popsicle molds and freeze until solid.
